Ingredients

  • 10 large lemons preferably organic
  • 1 liter of high-quality vodka
  • 3 cups of water
  • 2 cups of granulated sugar

Instructions

  • Prepare the Lemons: Wash the lemons thoroughly and use a vegetable peeler to remove the zest, avoiding the white pith as much as possible.
  • Infuse the Vodka: Place the lemon zest in a large glass jar and pour the vodka over it. Seal the jar tightly and let it sit in a cool, dark place for about 1-2 weeks, shaking it gently every few days.
  • Make the Simple Syrup: After the infusion period, combine the water and sugar in a saucepan over medium heat. Stir until the sugar is completely dissolved, then let it cool.
  • Combine and Strain: Once the vodka is infused, strain out the lemon zest using a fine mesh strainer or cheesecloth. Mix the infused vodka with the cooled simple syrup.
  • Bottle and Chill: Pour the limoncello into clean bottles and seal them. Place the bottles in the freezer for a few hours before serving to enjoy it chilled.
