INGREDIENTS:

For the Crust:
  • 1 ½ cups graham cracker crumbs (or digestive biscuit crumbs)
  • 6 tbsp unsalted butter, melted
  • 2 tbsp sugar
For the Limoncello-Lemon Filling:
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 cup water
  • ½ cup fresh lemon juice (about 2 large lemons)
  • 3 tbsp limoncello liqueur
  • Zest of 1 lemon
  • 4 large egg yolks, beaten (reserve the whites for the meringue)
  • 2 tbsp unsalted butter
For the Meringue Topping:
  • 4 large egg whites, at room temperature
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ tsp cream of tartar (optional, for added stability)

METHOD:

Prepare the crust

Preheat the oven to 350°F (175°C).

In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar.

Stir until smooth.

Press the mixture onto the bottom and sides of a 9-inch cake pan to form the crust.

Bake the crust for 8 to 10 minutes until lightly browned.

Let it cool while you prepare the filling.

Prepare the limoncello-lemon filling.

In a medium saucepan, whisk together the sugar and cornstarch.

Gradually add the water, lemon juice and limoncello, stirring until the cornstarch has dissolved and the mixture is smooth.

Set the saucepan over medium heat, stirring constantly until the mixture begins to thicken and comes to a slight boil.

When it starts to boil, cook for 1-2 minutes, stirring constantly, until the mixture is thick and glossy.

Remove the saucepan from the heat.

Gradually add a few tablespoons of the hot mixture to the beaten egg yolks, stirring continuously to temper the yolks.

Slowly pour the yolk mixture back into the saucepan, whisking to mix everything together.

Return to the heat and cook for another minute until the filling has thickened.
Remove from the heat, add the butter and stir until melted and smooth.

Pour the filling into the cooled crust and smooth the top.

Prepare the meringue topping

In a clean bowl, use an electric mixer to beat the egg whites on medium speed until frothy.

Add the cream of tartar (if using) and continue beating, gradually increasing the speed.

Slowly add the sugar, one tablespoon at a time, until the egg whites reach stiff, glossy peaks.

Add the vanilla extract and beat until smooth.

Assembly and baking

Preheat the oven to 375°F (190°C).

Spread the meringue over the hot filling, spreading it to the edges to seal it.

Use the back of a spoon to create swirls or peaks on the meringue.

Bake for 10-12 minutes or until the meringue is golden brown on the surface.

Cool and serve

Let the cake cool completely on a rack, then refrigerate for at least 2 hours before slicing and serving.

For an added touch, garnish with lemon zest or thin slices of lemon.

Tips

Temper the egg yolks:

This step ensures that the yolks do not curdle by gradually introducing them into the heat.

Seal the meringue:

Spread the meringue to the edges of the crust to prevent it from shrinking during baking.

Storage:

The pie can be stored in the refrigerator for up to 2 days, although the meringue is best enjoyed fresh.
