Makes about 12 Zeppole


  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • Vegetable oil for frying
  • Confectioners’ sugar for dusting
Ricotta and Orange Cream Filling:
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • Zest of 1 orange
  • 2 tablespoons orange juice
  • 1 teaspoon vanilla extract
  1. In a medium saucepan, bring the water, butter, and salt to a boil. Stir in the flour and reduce the heat to low. Stir vigorously until the mixture forms a ball, then remove from heat.
  2. Transfer the dough to a mixing bowl and let it cool for 5 minutes. Using an electric mixer, beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  3. Heat the vegetable oil in a large, deep pot to 370°F (190°C). Using a piping bag or spoon, carefully drop small portions of the dough into the hot oil. Fry until golden brown, then transfer to a paper towel-lined plate to drain.
  4. In a mixing bowl, combine the ricotta cheese, powdered sugar, orange zest, orange juice, and vanilla extract. Mix until smooth and creamy.
  5. Once the Zeppole have cooled slightly, use a piping bag to fill each pastry with the ricotta and orange cream mixture.
  6. Dust the filled Zeppole with confectioners’ sugar and serve immediately for the best flavor and texture.
