In this recipe we will prepare Cantucci Fichi e Noci, delicious Italian cookies characterized by the sweetness and goodness of walnuts and figs.

These crunchy cookies are perfect for dunking in your morning coffee or enjoying as a delicious snack.


So, let’s roll up our sleeves and bring a taste of Tuscany straight to your American kitchen.

INGREDIENTS:

  • 3 cups of all purpose flour
  • 1+3/4 cups of sugar
  • 1/2 cup of unsalted butter melted
  • 2 tsp of baking powder
  • 3 eggs
  • 1 tsp vanilla extract
  • 4 oz walnuts
  • 14 oz dry figs
  • 2 tbsp of rum
  • 1 egg beaten

 

METHOD

  • Heat oven at 350 F
  • Cut the figs in 2 or 3 pieces and place them in a bowl.
  • Add the rum and mix occasionally untill the figs absorbed the rum.
  • In a large bowl mix flour, sugar and baking powder.
  • Add 3 eggs, melted butter and vanilla extract and mix.
  • Add the figs and mix. The dough will be dry.
  • Add the walnuts and mix.
  • Divide the dough in 3.
  • On a slightly floured surface, roll the dough to form 2 logs.
  • Place the logs on a baking sheet and brush with the beaten egg.
  • Bake for 30 minutes or until golden brown, let the logs coll a little.
  • On a cutting board, cut the cantuccini on a slant.
  • Enjoy!!
