Ingredients: For the pastry:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2 large eggs
  • Zest of 1 lemon
  • A pinch of salt
For the custard cream:
  • 2 cups whole milk
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
For the topping:
  • 1/2 cup pine nuts, toasted
  1. Preheat the oven to 350°F (175°C).
  2. To make the pastry, place the flour, sugar, and salt in a large mixing bowl. Add the cold butter pieces and rub them into the flour mixture using your fingertips until it resembles coarse breadcrumbs.
  3. Add the eggs and lemon zest to the mixture and gently knead until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. After chilling, roll out two-thirds of the pastry dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.
  5. For the custard cream, heat the milk in a saucepan until it’s just about to boil. In a separate bowl, whisk together the egg yolks, sugar, flour, vanilla extract, and lemon zest until smooth. Slowly pour the hot milk into the egg mixture, whisking constantly.
  6. Pour the custard mixture back into the saucepan and cook over medium heat, stirring constantly, until it thickens. Remove from heat and let it cool slightly.
  7. Pour the custard into the prepared pastry shell.
  8. Roll out the remaining pastry dough and cut it into strips. Arrange the strips in a lattice pattern over the custard.
  9. Sprinkle the toasted pine nuts over the lattice.
  10. Bake the torta in the preheated oven for 30-35 minutes, or until the pastry is golden and the custard is set.
  11. Allow the torta to cool before serving.
