Tomato and cucumber salad with black pepper and basil…. a simple, fresh and tasty side dish.
In the summertime, salads are the best side dishes because they are quick and easy to make and complement the main course in a light way.
- 2 cups of cherry tomatoes, diced
- 2 cups of cucumbers, diced
- extra virgin olive oil to taste
- oregano to taste
- black pepper to taste
- basil leaves to taste
- salt to taste
- vinegar (optional)
Wash the tomatoes and cut them into pieces.
Wash the cucumbers, then peel them partially by ridging them lengthwise and cut them into slices that are not too thin.
Gather the vegetables in a bowl and season with a few pinches of oregano, a pinch of salt, a drizzle of oil and a splash of vinegar.
Sprinkle with pepper.
Mix well and serve, garnishing the salad with some basil leaves.
