There is something truly magical about the combination of tangy lemons and sweet, juicy blueberries.

This Lemon Blueberry Cake is a celebration of these flavors, a symphony of sweet and sour that will delight your taste buds and make you crave another slice.

Ingredients:
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 1/2 cups fresh blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
Instructions:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, combine the flour, baking powder, baking soda, and salt.
  • In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the lemon zest, lemon juice, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Stir until just combined.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • While the cake is cooling, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  • Once the cake is completely cooled, drizzle the lemon glaze over the top.
  • Slice, serve, and enjoy your homemade Lemon and Blueberry Cake!
