This dessert is a delicious fusion of tangy lemon, crunchy almonds and creamy cheesecake all in one.

It is a take on the classic cheesecake, offering a unique blend of textures and flavors that will make your taste buds dance.

Ingredients:
  • 1 cup graham cracker crumbs
  • 1/2 cup melted unsalted butter
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • Zest and juice of 2 lemons
  • 1 cup almond flour
  • 1/2 cup sliced almonds
  • Powdered sugar for dusting
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice
Instructions:
  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add the sugar, beating until well combined. Stir in the vanilla extract.
  4. Add the eggs one at a time, beating well after each addition. Stir in the lemon zest and juice.
  5. In a separate bowl, mix the almond flour and sliced almonds. Gradually add this to the cream cheese mixture, stirring until just combined.
  6. Pour the cream cheese mixture over the crust in the pan. Spread evenly with a spatula.
  7. Bake for 20-25 minutes, or until the edges are lightly golden and the center is set.
  8. Allow the cheesecake to cool in the pan on a wire rack. Once cooled, use the parchment paper to lift the cheesecake out of the pan.
  9. Carefully roll the cheesecake, starting from the short end, peeling back the parchment as you go.
  10. While the cheesecake is cooling, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  11. Once the cheesecake roll is cooled, drizzle the lemon glaze over the top. Allow the glaze to set before serving.
  12. Chill the cheesecake roll in the refrigerator for at least 2 hours before serving. Dust with additional powdered sugar just before serving, if desired.
