Today a traditional Sicilian recipe: stuffed artichokes ‘ammuddicati,’ that is, stuffed with a vegetarian and poor, but very tasty mixture made with stale breadcrumbs, pecorino, parmesan, provolone, parsley, garlic and extra virgin olive oil.

 


 

 

 

SERVINGS:4

INGREDIENTS:

  • 4 artichokes
  • water (for cleaning artichokes)
  • lemon (for cleaning artichokes)
  • lemon juice (for cleaning artichokes)
  • 1 cup of breadcrumbs (120 grams)
  • a sprig of parsley
  • 1 clove of garlic
  • 1/4 cup of Pecorino Romano cheese
  • 1/2 cup of Parmigiano Reggiano cheese
  • salt and pepper to taste
  • 5/8 cup of Provolone cheese
  • extra virgin olive oil to taste
