  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1/2 cup dark rum
  • 1 cup semi-sweet chocolate chips
For the Rum Syrup:
  • 1/2 cup unsalted butter
  • 1/4 cup water
  • 1/2 cup granulated sugar
  • 1/4 cup dark rum

For garnish:

  • icing sugar to taste
  • cinnamon sticks
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, combine the flour, sugar, cocoa, baking powder, baking soda, and salt. Stir until well mixed.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat until the mixture is smooth.
  4. Gradually add the boiling water and rum, stirring continuously. The batter will be thin, but that’s okay.
  5. Stir in the chocolate chips.
  6. Pour the batter into the prepared cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, make the rum syrup. In a small saucepan, combine the butter, water, and sugar. Bring to a boil, then reduce the heat and simmer until the sugar has completely dissolved. Remove from heat and stir in the rum.
  8. Once the cake is done, remove it from the oven and slowly pour the rum syrup over the top, allowing it to soak in.
  9. Let the cake cool completely in the pan before removing; garnish with icing sugar and cinnamon sticks.
