Ingredients:
  • 1 whole turkey (12-14 pounds)
  • 1 cup unsalted butter, softened
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 onions, quartered
  • 4 carrots, cut into large chunks
  • 4 celery stalks, cut into large chunks
  • 1 lemon, halved
  • 1 orange, halved
Instructions:
  1. Preheat your oven to 320°F (165°C).
  2. In a small bowl, mix together the softened butter, chopped rosemary, thyme, sage, minced garlic, salt, and pepper to create a herb butter mixture.
  3. Carefully loosen the skin of the turkey by gently sliding your fingers under the skin, being careful not to tear it.
  4. Rub the herb butter mixture under the skin of the turkey, covering as much of the meat as possible.
  5. Stuff the cavity of the turkey with the quartered onions, carrots, celery, lemon, and orange.
  6. Place the turkey on a rack in a roasting pan, breast side up.
  7. Cover the turkey loosely with foil and roast for about 3 to 3.5 hours, basting with the pan juices every 30 minutes.
  8. Remove the foil during the last 30 minutes of cooking to allow the skin to brown.
  9. The turkey is done when a meat thermometer inserted into the thickest part of the thigh reads 165°F (75°C).
  10. Once done, remove the turkey from the oven and let it rest for 20-30 minutes before carving.
