Sporcamusi with custard – also known as sporcamuss – are delicious treats of Apulian origin made of puff pastry and custard: their curious name comes from the fact that they are eaten while still warm and the custard, leaking out of the puff pastry base invariably ends up “dirtying” the mouth.
They are really simple treats to make that can be served either for a five-star breakfast or as an end-of-meal dessert.
The puff pastry squares and custard can be prepared in advance and assembled at the last minute; then simply warm them up in the oven five minutes before bringing them to the table.
Makes about 18 Sporcamuss
- 1 roll of puff pastry dough
- 1 cup of whipping cream

- granulated sugar to taste
- milk to taste
- powdered sugar to taste
Cut puff pastry into equal-sized squares.
Brush with milk and add sugar, then bake at 350 F for 15 minutes.
Whip the whipped cream and add the custard.
Let the puff pastry squares cool, then add the custard.
Decorate with powdered sugar and serve.
