Spaghetti with sardines, capers and cherry tomatoes.

I propose this tempting dish from the Sicilian tradition: pasta with sardines, capers and cherry tomatoes.
A tasty first course with an intense flavor and spicy aroma.

INGREDIENTS:

  • 14 oz of spaghetti
  • 1/2 cup of cherry tomatoes
  • 10 fresh sardines
  • 1 onion
  • extra virgin olive oil to taste
  • chili pepper to taste
  • 1/2 cup of desalted capers
  • mint to taste
  • lemon zest to taste
  • salt and pepper to taste

 

 

METHOD

Clean the sardines well, washing them and removing their heads, tails and bones.

Then cut them in half and set the cut sardines aside.

Place a pot with plenty of water for cooking the pasta on the stove.

In a nonstick pan pour two tablespoons of olive oil, finely chop the onion and heat it for a few minutes in the oil.

Add a little chili pepper as well.

Wash the cherry tomatoes and cut them into small pieces, pour them into the pan, season with salt and pepper.

(If you want to remove the skin from the cherry tomatoes blanch them first in boiling water, remove the skin and then pour them into the pan.)

Add the sardine fillets, desalted capers, chopped mint and a little lemon zest after a few minutes.

Season with salt.

Cook the pasta until al dente, drain and pour it into the pan with the sauce, adding a little cooking water.

Cook over high heat until evaporated.

Plate and serve hot.
