Spaghetti alla San Gennaro is a typical first course of the very poor Neapolitan cuisine known to be the favorite dish of the great Totò!

Talking about it is his daughter , Liliana , in the book dedicated to him in which she recounts the legendary king of laughter’s passion for this dish.


A dish that represents in toto the Neapolitan spirit , the spirit of the Neapolitans , a people accustomed to juggling poverty and creating with little an excellent dish!

I assure you that once you try it , you cannot do without it anymore!

 

 

The ingredients for this very good pasta are simple and easily available , after all they are pantry ingredients present in every home , even the making of the dish is simple and fast : anchovies , oregano , oil , with or without cherry tomatoes all topped with garlic flavored toast for a special dish!

 

 

Servings:4

INGREDIENTS:

  • 2 cups of Spaghetti pasta
  • 4 anchovies in oil
  • 2 cloves of garlic
  • 2 cups of cherry tomatoes
  • 8 basil leaves
  • oregano, salt and chili pepper to taste
  • extra virgin olive oil to taste
  • 8 slices of bread

 

 

METHOD

Rub the bread with a clove of garlic; save the remaining garlic for sautéing.

Roughly chop the bread, then crisp it in a pan with a drizzle of oil

Cook spaghetti in salted water.

Brown the garlic in a pan with a drizzle of oil, add the anchovies and let them melt over low heat.

Add the chili and oregano and allow to flavor;

Add the cherry tomatoes cut in half.

Season lightly with salt and cook for 5 minutes.

Drain the spaghetti al dente in the pan and finish cooking.

Plate and serve with fresh basil, a sprinkling of oregano and the crusty bread.

You can add the bread in slices or cubes (I prefer cubes).
