A creamy cake made with ricotta cheese and scented with orange and lemon zest; a gluten-free, easy-to-prepare treat is a perfect cake eaten like this or with added fresh fruit, jam or chocolate cream.


 

SERVINGS:6

INGREDIENTS:

  • 2 cups of ricotta cheese
  • 2/3 cup of granulated sugar
  • 3 eggs
  • 7 tbsp of cornstarch or potato starch
  • 1 zest of 1 orange
  • 2 tbsp of limoncello liqueur
  • 1 tsp of vanilla extract
  • powdered sugar to taste

 

METHOD

In a bowl, combine the sugar and eggs beat with electric whips until frothy, add the limoncello liqueyr and orange zest and vanilla extract, and continue to mix.

Sift the cornstarch into the ricotta and add it to the egg and sugar mixture.

Pour into an 8-inch mold lined with baking paper.

Bake at 320 F for about 50 minutes.

Let cool completely, decorate as desired with powdered sugar and store in the refrigerator.
