Here’s a recipe for Iris Siciliane, a delightful Sicilian pastry filled with sweet ricotta cheese and chocolate chips.

These pastries are sure to satisfy your sweet tooth and transport you to the flavors of Sicily.







For the Pastry Dough:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • Pinch of salt

For the Filling:

  • 1 1/2 cups ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 egg yolk (for brushing)


For the Pastry Dough:

  1. In a large mixing bowl, combine the flour, granulated sugar, and a pinch of salt.
  2. Add the cold, cubed butter to the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together the eggs, vanilla extract, and lemon zest.
  4. Make a well in the center of the flour mixture and pour in the egg mixture. Using a fork, gently mix the wet and dry ingredients until a dough forms.
  5. Turn the dough out onto a floured surface and knead it a few times until it’s smooth. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

For the Filling:

  1. In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and mini chocolate chips. Mix until well combined. Set aside.

Assembling Iris Siciliane:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll out the chilled pastry dough on a floured surface to about 1/8 inch (3mm) thickness.
  3. Use a round cookie cutter (about 3-4 inches in diameter) to cut out circles from the dough.
  4. Place a spoonful of the ricotta filling in the center of each dough circle.
  5. Carefully fold the dough over the filling to form a half-moon shape. Press the edges firmly to seal. You can use a fork to crimp the edges for a decorative finish.
  6. Place the filled pastries on the prepared baking sheet.
  7. Beat the egg yolk and brush it over the tops of the pastries. This will give them a beautiful golden color when baked.
  8. Bake in the preheated oven for about 20-25 minutes or until the pastries are golden brown.
  9. Remove from the oven and let them cool slightly on a wire rack.
  10. Serve your Iris Siciliane warm or at room temperature. Dust with powdered sugar if desired.
