This classic recipe combines the rich flavors of salt cod with an array of vibrant ingredients, including tomatoes, olives, capers and herbs.

The result is a succulent and flavorful seafood dish that captures the essence of Mediterranean cuisine.

INGREDIENTS:

  • 1.75 lbs soaked salted cod
  • 14 oz canned peeled tomatoes (or fresh tomatoes, peeled and chopped)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup black olives, pitted
  • 2 tablespoons capers, desalted
  • 1 red chili pepper (optional), finely chopped
  • 1 bunch of fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

 

METHOD:

Prepare the codfish: If using codfish, soak it in cold water for at least 48 hours, changing the water several times. Once ready, drain it and cut it into pieces.

In a large frying pan, heat the olive oil and add the finely chopped onion. Sauté over medium-high heat until the onion becomes transparent.

Add the chopped garlic cloves and chili pepper (if using). Sauté for a couple of minutes, being careful not to let the garlic burn.

Add the canned or fresh chopped tomatoes. Cook over medium heat for about 10 to 15 minutes, until the sauce thickens slightly.

Add the cod, black olives, capers, and chopped parsley. Stir well and cook over medium-low heat for another 15-20 minutes, or until the cod is cooked through and flakes easily.

Taste and adjust the salt and pepper to your preference.

Serve the Sicilian-style cod hot, drizzled with a little extra virgin olive oil if desired and garnished with fresh chopped parsley.
