I propose this tempting dish from the Sicilian tradition: pasta with sardines, capers and cherry tomatoes. A tasty first course with an intense flavor and spicy aroma.

 


The traditional Sicilian recipe calls for wild fennel and raisins.

Using fresh sardines, however, I prefer to prepare it this way.

 

 

 

 

 

SERVINGS:4

INGREDIENTS:

  • 1 lb fresh sardines, cleaned
  • 1/2 lb of cherry tomatoes, cut in half
  • 2 shallots, chopped
  • 2 garlic cloves, chopped
  • 1 tbsp of parsley
  • 1/2 cup of capers
  • 1 red pepper, chopped
  • 5 tbsp of extra virgin olive oil
  • salt to taste
  • 1 lb spaghetti
  • crispy crumb or breadcrumbs

 

 

METHOD

In a fry pan, over medium heat, put the olive oil, tomatoes, shallots, garlic, parsley, red pepper and salt.

Cook until the tomatoes are tender.

Add the sardines and capers.

Cook 5 more minutes or until the sardines are cooked.

In a frying pan with a little oil, fry the breadcrumbs until golden brown.

Add the cooked pasta, let it jump in the sauce over  medium heat.

Add the breadcrumbs.

Serve hot!
