This recipe is a delicious fusion of flavors and textures, combining tender, fluffy gnocchi with succulent shrimp, vibrant zucchini, and a rich pistachio pesto.

Perfect for a sophisticated dinner party or a cozy evening at home, this dish offers a taste of Italy that is both comforting and gourmet.

INGREDIENTS:

  • 2.2 pounds of gnocchi
  • 2.2 pounds of shrimps
  • 1 cup of pistachio pesto (click here for recipe)
  • 1.1 pounds of green zucchini
  • 1 clove of garlic
  • 1/2 onion
  • Extra Virgin Olive Oil (as needed)
  • Salt (as needed)
  • parsley to taste
  • chili pepper to taste
  • 1/2 cup of brandy

 

METHOD:

In a frying pan, add a drizzle of extra virgin olive oil, a clove of garlic and a pinch of chili pepper.

Cover and let the garlic brown.

After about three minutes, add the shells and heads of the shrimp.

Cover again and let brown for five minutes.

Add 1/2 cup of brandy, let it evaporate and turn off the heat.

Remove the shrimp heads and shells, pressing them down well to extract all the cooking juices in the pan.

After removing the heads and shells, add the shrimp meat and let it brown.

Then remove the shrimp and set them aside on a plate.

In the same pan, add the diced zucchini and let them brown for a few minutes, always covering.

Remove from the pan and set aside on a plate.

At this point, add 2 cups of water to the pan, adjust the salt, cover and heat until almost boiling.

Add the gnocchi and cook for five minutes, then turn off the heat.

Uncover and add 1 cup  of pistachio pesto, stir and add the shrimp meat and sautéed zucchini, continuing to stir.

Finally, plate the dish and decorate as desired.
