Sfinci di San Giuseppe, also known as St. Joseph’s Day Cream Puffs, are a traditional Italian dessert enjoyed on St. Joseph’s Day.

These delicious cream puffs are typically filled with a sweet ricotta cream and often adorned with a cherry on top.


Here’s a recipe to make these delightful treats from scratch:

 

 

 

For the choux pastry:

  • 1/2 cup water
  • 1/2 cup whole milk
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1 cup all purpose flour
  • 4 large eggs

For the sweet ricotta filling:

  • 1 1/2 cups whole milk ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 cup candied orange peel (optional)
  • Maraschino cherries for garnish

For garnish:

  • Powdered sugar for dusting

 

METHOD

For the choux pastry:

In a saucepan, combine water, milk, butter, sugar and salt. Bring to a boil over medium heat, stirring to melt the butter.

Remove the saucepan from the heat and immediately add the flour all at once. Stir vigorously until the mixture comes together.

Return the pot to low heat and continue stirring for about 1 to 2 minutes to let the mixture dry out. It should form a smooth ball and leave a thin film on the bottom of the pan.

Transfer the dough to a bowl and let it cool for a few minutes.

Add the eggs, one at a time, mixing thoroughly after each addition. The dough should be smooth and glossy.

Preheat the oven to 370°F (190°C).

Drop rounded spoonfuls of choux pastry onto a baking sheet lined with baking paper, leaving a space between each for expansion.

Bake for 30 to 35 minutes or until the puffs are golden brown and hollow when tapped. Do not open the oven during the first 20 minutes of baking.

Remove the puffs from the oven and allow them to cool on a wire rack.

For the sweet ricotta filling:

In a bowl, combine the ricotta, powdered sugar, vanilla extract, lemon zest, and candied orange peel (if using). Mix until well blended.

Assembly:

Once the puffs have cooled, carefully cut off the top third of each puff.

Fill the bottom part of each cream puff with a generous spoonful of sweet ricotta filling.

Replace the top portion of the cream puffs.

Dust the filled cream puffs with powdered sugar and garnish with a Maraschino cherry.
