Today I’ll introduce you to the Recipe of “Scarpaccia”, a particular Zucchini Sweet, ideal to satisfy our craving for dessert by savoring again the taste of tradition

A sweet recipe to enjoy at the end of a meal made with zucchini and typical of the Viareggio area.


Scarpaccia belongs to those peasant cuisine recipes that were passed down from generation to generation, which involved the use of simple and rustic ingredients.

 

So let’s see together how to prepare this simple and very tasty cake!

 

 

SERVINGS:6

INGREDIENTS:

  • 2 cups of zucchini, diced
  • 1+1/4 cups of all purpose flour
  • 1/2 cup of sugar
  • 2 tbsp of butter
  • 2/5 cup of milk
  • 2 tsp of vanilla extract

 

METHOD:

We start by taking the zucchini and cutting them into very thin rounds.

We melt the butter in a small saucepan over very low heat.

In a bowl we first mix the eggs with the sugar, then add the sifted flour, vanilla, butter and a pinch of salt.

We continue stirring and also add the milk, letting it incorporate well into the mixture.

Now we can also add the zucchini, again mixing all the ingredients well.

We pour the mixture into a previously buttered and floured baking dish.

We drizzle with a little oil and put our cake to bake in the oven at 390 F for twenty minutes.

We then lower the temperature to 350 and bake for another 40 minutes or so.

When it is ready it will have made a nice crust!
