Packed with the robust flavor of pork sausage, paired perfectly with tender potatoes and roasted peppers, this dish is a comforting classic, easy to prepare and incredibly delicious.
With just a handful of ingredients and minimal preparation time, you can create a hearty meal that is sure to impress.

INGREDIENTS:

  • 21 oz of Pork Sausage
  • 1.5 pounds of potatoes
  • 4 to 6 peppers
  • 2 tsp of extra virgin olive oil
  • rosemary and thyme (fresh or dried) to taste
  • garlic to taste (optional)
  • salt and pepper to taste

 

 

METHOD:

Peel the potatoes, cut them into small chunks and put them in cold water for about 10 minutes (I left the skin well cleaned).

Clean the peppers from the stalk and inner seeds and cut them into small pieces.

Drain the potatoes well and place them along with the peppers directly in the baking dish that you will use to bake in the oven.

Season with the oil, salt and pepper and mix well, preferably with your hands, so that all the vegetables are oiled.

Cut each sausage into 3 or 4 pieces  and add them to the baking dish.

Mix everything well, distributing so there are no gaps in the baking dish.

Add poached garlic cloves lightly crushed between the vegetables to taste (they are delicious cooked this way, it makes a fabulous garlic cream!).

Scatter rosemary needles and thyme florets over the top.

Bake at 350 F degrees for about 40 minutes, taking care to stir well every 15 minutes or so.

Baking will be complete when the potatoes are well browned and soft inside.

The time depends very much on the oven.

If you want to do it sooner you can also blanch the potatoes already cut into chunks for 5 minutes or even cover the pan with aluminum foil for 15 minutes.
