Rooted in the island’s fertile soil and its deep culinary traditions, this dish marries the freshness of locally sourced broccoli with the robust flavor of savory Italian sausage, creating a symphony of taste that delights the senses.

INGREDIENTS:

  • 10 oz of pasta (preferably short pasta like penne or rigatoni)
  • 2 Italian sausages (sweet or spicy, as per your preference)
  • 1 bunch of fresh broccoli
  • 3 cloves of garlic, finely chopped
  • 1/2 cup grated Parmesan cheese
  • Olive oil
  • Salt and black pepper to taste
  • Grated Pecorino cheese (optional, for serving)

 

METHOD:

Prepare the broccoli:
Cut the broccoli into small florets, separating them from the central stem. Rinse them under running water and set aside.

Prepare the sausage:
Skin the sausages and crumble them into evenly sized pieces.

Cook the pasta:
Bring a pot of lightly salted water to a boil.
Add the pasta and cook until al dente according to package instructions. Drain the pasta, but save some of the cooking water.

Prepare the sauce:
In a large skillet, heat olive oil over medium heat.

Add the finely chopped garlic and sauté until lightly golden, being careful not to burn it.

Then add the sausage pieces and cook until well browned.
Cook the broccoli: Add the broccoli to the pan with the sausage.

Stir well and cover with a lid.

Cook for about 8 to 10 minutes, stirring occasionally, until broccoli is tender but still crisp.

Season with salt and pepper to taste.

If you want a little extra heat, you can also add a few red pepper flakes.

Finish the pasta:
Add the cooked pasta to the pan with the broccoli and sausage.

Stir well, adding some of the pasta cooking water to create a light sauce.

Add the grated Parmesan cheese and stir until all the ingredients are well combined and the pasta is coated with the sauce.

Serve:
Transfer the pasta with broccoli and sausage to individual plates.

Sprinkle with grated pecorino cheese if desired.

Serve hot and enjoy your delicious pasta dish!
