I present my Ricotta and Chocolate Squares, a dessert that is more than just a dessert: it is a culinary journey.

Makes about 16 squares

INGREDIENTS:

  • 2 cups of ricotta cheese
  • 1 cup of sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of semi-sweet chocolate chips

 

METHOD

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan and set aside.
  2. In a large bowl, combine the ricotta cheese and sugar. Beat until smooth.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the cocoa powder, flour, baking powder, and salt. Gradically add this to the ricotta mixture and stir until well combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared baking pan. Smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the squares to cool in the pan on a wire rack. Once cooled, cut into squares.
