This savory pie features a rich blend of cheeses, perfectly complemented by the sweetness of caramelized onions, all encased in a golden, buttery crust.

Ingredients:
  • 1 sheet of puff pastry
  • 2 large onions, thinly sliced
  • 2 tablespoons of olive oil
  • 7 ounces of ricotta cheese
  • 1 cup of grated Parmigiano Reggiano cheese
  • 1/2 cup  of grated mozzarella cheese
  • 3 eggs
  • Salt and pepper to taste
Instructions:
  1. Preheat your oven to 400°F.
  2. In a pan, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 15-20 minutes. Set aside to cool.
  3. In a bowl, mix together the ricotta cheese, Parmesan cheese, mozzarella cheese, and eggs. Season with salt and pepper to taste.
  4. Roll out the puff pastry and use it to line a greased pie dish, trimming off any excess pastry.
  5. Spread the caramelized onions over the pastry base, then pour the cheese and egg mixture on top, spreading it out evenly.
  6. Place the pie in the preheated oven and bake for 25-30 minutes, or until the pastry is golden and the filling is set.
  7. Once cooked, remove the pie from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
