This dessert is a delicious take on the classic savory ravioli, transforming it into a decadent treat perfect for satisfying your sweet tooth.

Each ravioli is filled with a creamy mixture of ricotta and rich chocolate, then lightly fried to perfection and dusted with a generous sprinkling of powdered sugar.

  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1/2 cup chocolate chips or finely chopped chocolate
  • 1 teaspoon vanilla extract
  • 1 recipe of  homemade pasta dough ***
  • 2 large eggs, beaten (for egg wash)
  • Vegetable oil, for frying
  • Optional: zest of 1 orange for added flavor

Ingredients for Homemade Pasta Dough:
  • 2 cups all-purpose flour, plus extra for dusting
  • 3 large eggs
  • 1/2 teaspoon salt
  • Water, as needed
Instructions for Pasta Dough:

Make the Pasta Dough:

Place the flour on a clean, flat surface. Make a well in the center and crack the eggs into it. Add the salt.

Using a fork, gently beat the eggs and begin to incorporate the flour from the inside rim of the well. Continue until the dough starts to come together.

Knead the dough with your hands for about 10 minutes, until it becomes smooth and elastic. If the dough is too dry, add a little water, one teaspoon at a time.

Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Roll Out the Dough:

After the dough has rested, divide it into four equal portions. Keep the dough you’re not currently working with covered to prevent it from drying out.

Dust your surface with flour. Take one portion of the dough and roll it out into a thin sheet, about 1/16 inch thick. You can use a pasta machine or a rolling pin.

Cut the Dough:

With a pastry cutter or a sharp knife, cut the pasta into 2-inch squares or circles, depending on your preference.

  1. Prepare the Filling:
  • In a mixing bowl, combine the ricotta cheese, 1/2 cup of powdered sugar, chocolate chips, and vanilla extract. If you’re using it, add the orange zest here. Mix until all ingredients are well incorporated.
  • Assemble the Ravioli:
  • Lay out the wonton wrappers or circles of pasta dough on a clean surface. Place a small spoonful of the ricotta-chocolate mixture in the center of each wrapper.
  • Brush the edges of the wrappers lightly with the beaten egg wash. This will act as a glue to seal the ravioli.
  • Place another wrapper on top of the filling and press down the edges firmly, ensuring there are no air bubbles and that the ravioli is completely sealed.
  • Fry the Ravioli:
  • Heat a large, deep skillet or deep fryer with vegetable oil to 350°F (175°C). The oil should be about 1 1/2 inches deep to allow the ravioli to float while frying.
  • Carefully place a few ravioli at a time into the hot oil. Do not overcrowd the skillet.
  • Fry the ravioli for about 1-2 minutes on each side or until they are golden brown and crispy.
  • Use a slotted spoon to remove the ravioli from the oil and drain them on a paper towel-lined plate.
  • Serve:
  • While the ravioli are still warm, dust them generously with powdered sugar.
  • Serve immediately for the best texture and flavor.
Chef’s Note: For an extra touch of elegance, serve these sweet ravioli with a side of whipped cream or a scoop of vanilla gelato. You can also drizzle them with chocolate sauce or a fruit coulis for an added layer of flavor.
