The cake with ricotta and amaretti, magnificent and good!

Today’s recipe is simple and quick to prepare.


It can prove perfect to enjoy in the morning for breakfast along with a steaming cup of coffee, but of course it is also great for a hearty snack.

INGREDIENTS:

  • 2 whole eggs
  • 1 cup of granulated sugar
  • 1//2 cup of butter
  • 50 ml. milk
  • 3 tbsp of Amaretto liqueur
  • a pinch of salt
  • 1 +1/2 cup of all purpose flour
  • 3/4 tsp of baking powder
  • 1 cup of ricotta cheese
  • 1 cup of crumbled Amaretti cookies
  • 1/3 cup of coarsely chopped almonds

 

METHOD

Melt the butter in a double boiler.

Allow to cool slightly.

Place 1 whole egg with 1/2 cup sugar in a large bowl and mix with electric whisk.

Add melted butter, milk, 1 small glass of Amaretto, pinch of salt.

Last, add flour sifted with baking powder.

Pour the mixture into the buttered and floured cake pan (or lined with wet and squeezed baking paper).

Separately, beat 1 whole egg with another 1/2 cup sugar, add the ricotta and crumbled Amaretti cookies, working everything to a cream.

Pour over the first mixture and sprinkle with the coarsely chopped almonds.

Bake for 1 hour in a 350 F oven, take out of the oven, let cool, and sprinkle with powdered sugar.
