INGREDIENTS:

  • 2 cups of all purpose flour
  • 3/4 cup of sugar
  • 1/2 cup of almonds
  • 1 egg
  • ΒΌ cup + 3 tbsp of butter
  • 2 tsp of baking powder
  • a pinch of salt

FOR THE FILLING:

  • 1 cup of ricotta cheese
  • 1/4 cup of sugar
  • 1 cup of amaretti cookies
  • 1/2 cup of almonds
  • powdered sugar to taste

 

METHOD

Tools: food processor, blender or food processor; bowl; baking pan

To start, grind the almonds until they become a flour and set aside.

Same with the amaretti cookies, so crumble them in the mixer and set aside.

With that done you can start preparing the base of the amaretti and ricotta crumble.

Then put the flour in a bowl and add half of the chopped almond flour.

Followed by baking powder and a pinch of salt.

Mix the flours then first add sugar and chopped butter.

Begin to rub in with the palms of your hands.

After that add the egg and continue rubbing with your hands.

You must obtain a grainy mixture and not compact.

Immediately after that prepare the filling by mashing the ricotta cheese with the tines of a fork.

 

Then add first the sugar and then the remaining part of the almond flour and the crumbled amaretti cookies.

Finally knead the cream to blend everything together.

Then line a baking pan with baking paper and pour half of the crumbled shortcrust pastry onto the bottom.

Add the ricotta and amaretti cream and immediately top with the remaining crumbled shortbread.

To finish, bake at 350 F for 35 minutes.
