Fragrant, tasty, rich: this is “Risotto with radicchio, gorgonzola and walnuts” , a first course that will leave your guests speechless!

 


 

 

 

 

 

 

SERVINGS:4

INGREDIENTS:

  • 1+ 1/2 cups of Arborio rice
  • 1 cup of sweet Gorgonzola cheese
  • 1 head of radicchio
  • 1/4 cup of walnuts
  • 1 clove of garlic
  • half a onion
  • 2 cups of vegetable broth
  • extra virgin olive oil to taste
  • half a glass of dry white wine (375 ml.)
  • salt and pepper to taste

 

METHOD

Cut the radicchio into strips and wilt it for 3-4 minutes with a drizzle of oil and the finely chopped onion.

Add the rice and toast it, deglaze with white wine and let it evaporate.

Add the hot broth a little at a time, bring it to a simmer over moderate heat, and add salt and pepper to taste.

With the heat off, put in the diced gorgonzola and coarsely chopped walnuts; stir the rice well and let it rest for a couple of minutes before serving.
