In summer many people prefer to eat light meals and fresh foods that are also easy to take to the beach.

Today we suggest a simple potato, onion and green bean salad, a tasty dish that is beautiful to present.

Here is the recipe, quick and easy.





  • 12 oz of potatoes
  • 14 oz of green beans
  • 3  tomatoes
  • 1 onion
  • Salt, to taste
  • Extra virgin olive oil, to taste
  • Pepper, to taste
  • oregano to taste



Take 2-3 large potatoes and cook them with their skins on, submerging them in a pot of cold, salted water.

Boil them without letting them flake, then peel them and cut them into large chunks.
Let them cool; they will gain more flavor.

Meanwhile, prepare the water for the green beans to be boiled.

First, however, remember to clean them thoroughly by removing the ends.

When the potatoes and green beans are ready and at room temperature, put them in the same bowl and add 3 large salad tomatoes cut into not-too-small pieces.

To this base you can add anything you want: onion cut into rounds, but also pitted olives, tuna in oil, corn.

For the dressing you can use a tablespoon of Evo oil, a pinch of salt and pepper.

But if you prefer also lemon juice and oregano.
