  • 2 cups dried beans (preferably cranberry beans)
  • 1 cup pork rinds
  • 1 onion
  • 2 cloves of garlic
  • 2 ripe tomatoes
  • Fresh parsley
  • 1 sprig of rosemary
  • Salt and pepper to taste
  • Extra virgin olive oil



  1. Soaking the beans: Place the dried beans in a bowl, cover them with cold water, and let them soak for at least 8 hours or overnight.
  2. Preparing the pork rinds: If the pork rinds are raw, boil them in a pot of cold water for about 30 minutes. Then drain them, cool them with cold water, and cut them into pieces.
  3. Cooking the beans: Drain the soaked beans, place them in a pot with plenty of cold water, and add the rosemary. Bring to a boil and then reduce the heat. Cook the beans for about 1-2 hours or until tender. Add salt towards the end of cooking.
  4. Preparing the sauté: In a large skillet, heat some extra virgin olive oil and add the chopped onion and garlic. Sauté until golden.
  5. Adding pork rinds and tomatoes: Add the cut pork rinds to the sauté and sauté for a few minutes. Then add the peeled and diced tomatoes. Cook until the tomatoes break down and the sauce thickens.
  6. Combining the ingredients: Mix the sauté with the cooked beans. Stir well and let them cook together for another 15-20 minutes. Adjust salt and pepper to taste.
  7. Finishing touches: Add chopped fresh parsley and serve the beans with pork rinds hot. You can accompany the dish with good crusty bread.
