Meatballs are a simple and very tasty second course, a great classic of Italian tradition.

They are prepared with ground meat, eggs, breadcrumbs, chopped parsley, grated cheese and, once medium-sized balls are obtained, they are fried in boiling olive oil until lightly browned.


The end result is morsels of meat that are crispy on the outside and soft at the core, to be served piping hot at a Sunday family meal.

INGREDIENTS:

  • 1 lb. ground beef (50% veal and 50% pork)
  • 1 small onion, chopped
  • 2 eggs
  • 1 tbsp freshly grated Parmigiano Reggiano cheese
  • 4 tbsp of Italian bread, finely cut
  • 2 tbsp of chopped parsley
  • 1 tsp of chopped garlic
  • salt and pepper to taste
  • whole garlic cloves
  • extra virgin olive oil to taste

 

METHOD

  • In a large bowl place the beef, onion, garlic, eggs, Parmigiano Reggiano cheese, parsley, bread, salt and pepper;
  • Using your hands, mix all ingredients together;
  • Take 1 teaspoon at a time of the mixture and roll it in your hands to form little balls;
  • Place olive oil and the whole garlic cloves in a non stick fry pan over medium heat;
  • Add the meatballs and cook until golden;
  • Turn the meatballs and cook until they are ready;
  • Place on a serving dish and Buon Appetito!
