We are talking about almond pizzicotti, the soft and fragrant cookies usually found among Sicilian almond pastries.

Preparing them at home is really simple.

The recipe I propose is a little different from the traditional one.

In fact, I thought of putting less sugar so that the flavor of the almond is more enhanced.





  • 2 1/2 cups of almond flour (you can use grind almonds)
  • 3/4 cups of powdered sugar
  • powdered sugar for decoration to taste
  • 2 egg whites
  • 1/4 tsp of almond extract
  • zest of 1 lemon



In a bowl, process the egg whites.

Add the almond extract and grated zest of one lemon and continue to process.

When they are foamy enough, add the powdered sugar.

Work with a spoon for a few seconds and add the almond flour as well.

Continue working first with the spoon and then with your hands.

When you have obtained a fairly smooth and soft dough, place it in the refrigerator for at least 30 minutes.

It is not necessary to knead your almond paste very much.

After the 30 minutes have passed, take the dough out of the refrigerator and form it into small balls, all the same size.

At this point dip each sphere in powdered sugar and place it on a baking sheet.

With two fingers pinch it In such a way as to give the classic cookie shape.

Proceed in this way for all the spheres.

When you are done, let them rest in the refrigerator for at least 4 hours.

In extreme cases you can speed up this step by placing the cookies back in the freezer for about three quarters of an hour.

However, it is preferable to let dough rest in the refrigerator for longer.

After resting, bake your pizzicotti in a preheated oven at 350 F for about 12 minutes.

The aroma of your almond pizzicotti will be intoxicating and the taste amazing.
