Easter is approaching, and among the many delicacies that are prepared in our homes there is one that I really like, even though it is not exactly a light dish.

But maybe that’s also why I like it so much, and why you like it so much too, I know.

I’m talking about Pizza Chiena, of course.

This is the recipe handed down from my grandmother.

I hope you enjoy it!





For pastry:

  • 1 cup of water
  • 2 ΒΌ teaspoons of fresh yeast
  • 2 3/4 cups of all purpose flour
  • 1/2 tbsp of salt
  • 1/3 cup of butter
  • pepper to taste


For the filling:

  • 2 cups of cow’s ricotta cheese
  • 4 slices of cooked ham (in small cubes)
  • 2 cups of Pecorino Romano cheese grated
  • 5 large eggs



After dissolving the yeast in the water, we add all the flour, continue kneading and add the salt and butter.

Finally, we add the pepper.

When all the flour has been absorbed and the ingredients blended, we let the rough dough rest, for 15 minutes.

Meanwhile, we prepare the filling.

We beat the eggs in a bowl, add the cooked ham and ricotta cheese, Pecorino cheese and mix everything well.

We set aside.

After 15 minutes, we fold the dough, again from the outside to the center, then divide it into two parts, form balls and fold each one, again from the outside to the center.

Finally let’s put them to rise in a closed container for 2 hours at room temperature.

After the leavening time has elapsed, let us butter a baking sheet, take one of the leavened balls and roll it out with a rolling pin to form a disk slightly larger than the diameter of the baking sheet.

Let us place it in the buttered baking dish, so that the pastry sheet goes over the edge, and pour in the previously prepared filling, trying to arrange it evenly.

Roll out the other ball with a rolling pin, making a disk of the same diameter as the baking sheet and lay it on top of the filling, then fold the edges of the bottom sheet with those of the top sheet, going to form a cordon.

Let it rest for 30 minutes, then brush with a little melted butter and place the pan in a preheated oven at 350 F for 45 to 50 minutes.

Pizza Chiena is ready.
