Sicilian-style pesto is a very simple sauce to make but with great impact: it requires just a few healthy ingredients










  • 1 pound tomatoes
  • 1/3 pound of fresh ricotta cheese
  • 15 basil leaves
  • 1 garlic chopped
  • 2 tbsp pine nuts
  • 1/2 cup Parmigiano Reggiano cheese (grated)
  • extra virgin olive oil as needed
  • salt and pepper to taste
Cut out all the seeds from the tomatoes.
In a large bowl, place the tomatoes, pine nuts, garlic and basil.
Add the Parmigiano Reggiano cheese, ricotta, salt and pepper.
Drizzle olive oil and mix with a hand blender, add more olive oil if needed.
Use your Pesto alla Siciliana for all your recipes.
You may refrigerate your Pesto up to 2-3 days in an air tight container.
