This is a great recipe.

It is reminiscent of “Pasta alla Norma” but I added ground sausage to it.

SERVINGS:4

INGREDIENTS:

  • 5 pieces of pork sausage (ground)
  • 1 eggplant, cubed
  • salt to taste
  • 3 cups of tomato sauce
  • Parmigiano Reggiano cheese to taste
  • 16 oz of Penne pasta
  • 1/2 onion
  • extra virgin olive oil to taste
  • oil for frying to taste
  • dry white wine to taste

 

 

 

METHOD

We begin by slicing the eggplant and cutting it into cubes.

In a frying pan, we pour the frying oil and add the eggplant cubes.

When they are golden brown, let’s place them back in a bowl with paper towels.

Now we slice half an onion finely.

Let’s remove the casings from the sausage pieces, obtaining small pieces.

In a frying pan, we add extra virgin olive oil and sauté the onion.

We add the ground sausage and let it cook on a medium flame for about 3 minutes.

Now we add the white wine and let it cook on a high flame until it has evaporated completely.

Now we add the tomato sauce and adjust the salt.

We let it cook on a low flame for about 45 minutes.

We add the fried eggplant cubes and let it cook for another 10 minutes.

Meanwhile, we cook the pasta, drain it and finally add it to our sausage and eggplant sauce.

Sprinkle with Parmesan cheese and….BUON APPETITO!!!
