Penne all’Arrabbiata is a beloved classic of Italian cuisine, known for its bold flavors and spiciness.
Originating in the Lazio region of Italy, this simple but delicious pasta dish combines al dente penne pasta with a spicy tomato sauce made with fresh garlic, chili peppers, and high-quality extra virgin olive oil.
The name “arrabbiata” translates to “angry” in Italian, a nod to the dish’s characteristic heat, which comes from the generous use of red chili pepper.
Perfect for lovers of spices and authentic Italian flavors, Penne all’Arrabbiata is a must-try recipe that is quick to prepare, vegan and full of Mediterranean flavors.
SERVINGS:4
INGREDIENTS:
12 oz penne pasta
14 oz canned whole tomatoes (or tomato puree)
2-3 cloves garlic
2-3 red chili peppers (adjust based on your heat preference; you can use crushed red pepper flakes, about 1-2 tsp)
4 tbsp extra virgin olive oil
Salt to taste
Fresh parsley (optional, for garnish)
METHOD: Prepare the Arrabbiata sauce: Peel and lightly crush the garlic cloves.
In a large skillet, heat the olive oil over medium heat and sauté the garlic until golden (be careful not to burn it).
Add chopped chili or red bell pepper flakes to the oil and stir for a few seconds to release the spices. Cook the tomatoes: Pour the canned tomatoes (or passata) into the pan, crushing the whole tomatoes with a fork. Let the sauce cook over medium-low heat for about 15 to 20 minutes, stirring occasionally.
Add salt to taste toward the end of cooking. Cook the pasta: Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente. Combine the pasta and sauce: Drain the pasta and add it directly to the pan with the sauce. Sauté the pasta in the sauce over medium heat for a couple of minutes to allow the flavors to blend. Serve: Serve the penne all’arrabbiata hot. If desired, garnish with fresh parsley for a touch of color and freshness.
