Penne alla vodka: who hasn’t had them at least once?

Penne alla vodka is an iconic dish from the 1980s, a classic perfect for any occasion, ideal to bring to the table for the holiday season.


This pasta dish is really delicious, creamy and fragrant, ready in just a few minutes, put everyone in agreement with its goodness!

INGREDIENTS:

  • 1 onion
  • 3 tbsp of extra virgin olive oil
  • 5 slices of pancetta affumicata or smoked bacon (diced)
  • 1 cup of heavy cream
  • 2 cups of diced tomatoes (fresh or in a can)
  • 12 oz of Penne pasta
  • black pepper and salt to taste
  • 2 shots of vodka
  • parsley to taste

 

 

METHOD

Pour the oil into a frying pan and let the finely chopped onion brown.

Add the bacon and let it brown for a couple of minutes, after which deglaze with the vodka and, as soon as it has evaporated, add the diced tomatoes.

Season lightly with salt, add a tiny bit of pepper and cook the sauce for 20 minutes over a gentle heat.

At this point pour in the cream, bring to a boil, continue cooking for a couple of minutes and turn off the flame.

Cook the pasta in boiling salted water and drain when al dente, transfer it to the pan with the sauce, let it season for a few seconds over medium heat and serve.

Sprinkle with parsley.
