Pastina in broth is a simple soup from the peasant poor cuisine, based of course on pasta boiled in broth.
- chicken scraps
- 2 stalk of celery
- 3 carrot
- 2 medium onions
- 3 bay leaf
- 2 cup of pastina
- salt to taste
- extra virgin olive oil to taste
- grated Parmigiano Reggiano cheese to taste (optional)
Preheat oven to 390 F degrees grill.
In a baking dish place roughly chopped chicken and celery, carrot and onion.
Add salt and oil and put in the oven.
Once charred,remove from oven and add in a pot with cold water,start from low flame and close lid for cooking for 4 hours.
Cook the pastina with the broth and once cooked, plate and add broth fine to cover the pastina.
