This pasta with ricotta cream cheese, cherry tomatoes and basil is a harmonious blend of flavors that will tantalize your taste buds.

It is a simple yet elegant recipe, perfect for a cozy dinner for two.

INGREDIENTS:

  • 7 ounces of Pasta
  • 7 ounces of Ricotta
  • A few sprigs of Basil
  • 2 tablespoons of Grated Parmigiano Reggiano cheese
  • 15 cherry tomatoes
  • Salt to taste
  • Extra Virgin Olive Oil to taste

INSTRUCTIONS

Wash and dry the cherry tomatoes, cut them in half, and place them on a baking sheet lined with parchment paper.

Sprinkle with salt and bake in a preheated oven at 350 F for 15 minutes on the top rack until they develop a crust on the surface.

Thoroughly wash and dry the basil.

Once the tomatoes are cooked, place them in a blender, add the basil, grated Parmigiano Reggiano cheese, ricotta, and enough extra virgin olive oil to blend everything into a creamy sauce.

Cook the pasta in plenty of salted, boiling water. Once cooked, toss it with the prepared sauce.
