Need an idea for lunch?

Here is a recipe for penne with yellow peppers and gorgonzola, a simple and very tasty first course.


 

 

 

SERVINGS:4

INGREDIENTS:

  • 1 shallot, finelly sliced
  • 2 yellow peppers
  • 3/4 cup of gorgonzola cheese
  • 1/2 cup of mascarpone cheese
  • 14 oz of pasta (penne it’s good)
  • salt and pepper to taste
  • chopped parsley to taste
  • Parmigiano Reggiano cheese to taste
  • extra virgin olive oil to taste

 

METHOD

In a frying pan sauté finely sliced shallots and 2 medium peppers chopped into chunks.

Cook for 10 minutes, diluting with 1 tablespoon warm water.

We adjust the salt.

Meanwhile, cook the pasta in plenty of salted water.

Drain the pasta al dente and pour it into the pan, adding the gorgonzola, mascarpone and a grinding of pepper.

We serve by sprinkling with Parmigiano Reggiano cheese and chopped parsley.
