- 600 grams of mezze maniche (about 1.3 pounds)
- 2 cans of cannellini beans
- 3/4 pound of crumbled sausage
- 1 small carrot
- Half an onion
- Some celery
- Extra virgin olive oil
- Half a cup of dry white wine
- Chopped parsley
- Salt and pepper to taste
Chop the celery, carrot, and onion and sauté them with the oil in a deep-sided pan.
Add the canned beans with all their liquid and a little salt, and cook over medium heat, stirring occasionally, for about 15 minutes.
Then, turn off the heat and let it cool for a bit.
Meanwhile, bring a pot of salted water to a boil for the pasta and blend the bean sauce into a puree using a blender or food processor.
In the same pan where you prepared the bean sauce, sauté the crumbled sausage in a little oil and deglaze with the white wine.
Add the bean puree to the browned sausage and cook over low heat for another couple of minutes.
If the sauce becomes too thick, add some of the pasta cooking water.
Transfer the cooked pasta to the pan with the sauce, add the chopped parsley, a sprinkle of black pepper, and quickly toss everything together.
