PASTA WITH BAKED CHERRY TOMATOES AND CAPERS

SERVINGS:4

INGREDIENTS:

  • 14 oz pasta (your choice of type)
  • 2 cups cherry tomatoes, diced
  • 1 clove garlic, finely chopped
  • 1 cup Parmigiano Reggiano cheese, grated
  • 2 tsp capers
  • 1/2 cup breadcrumbs
  • Extra virgin olive oil, to taste
  • Salt, to taste

METHOD:

Preheat the oven: start by lining a baking sheet with baking paper. This will make it easier to clean and ensure even roasting of the tomatoes.

Prepare the cherry tomatoes: Wash and cut the cherry tomatoes in half or quarters, depending on their size. Arrange the first layer of tomatoes on the prepared baking sheet.

Add the garlic and seasoning: Finely chop the garlic and sprinkle half of it over the tomatoes. Add a pinch of salt, a generous amount of grated Parmesan cheese, and a sprinkling of breadcrumbs. Drizzle with a little extra virgin olive oil to promote toasting.

Layer the second batch: Add another layer of cherry tomatoes on top of the first layer, then the remaining garlic, Parmigiano Reggiano cheese, capers and breadcrumbs. Drizzle with more olive oil.

Roast the tomatoes: Place the baking dish in a preheated oven at 350 F for about 45 minutes. The tomatoes should soften and begin to caramelize, creating a rich and flavorful topping for the pasta.

Cook the pasta: While the tomatoes roast, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions, usually about 8-10 minutes, until al dente.

Combine the pasta and tomatoes: Once the pasta is cooked, reserve a small amount of the pasta cooking water and drain. Add the roasted cherry tomatoes and all their juices to the pot with the drained pasta. Stir vigorously to coat the pasta with the rich tomato sauce, adding, if necessary, a splash of the pasta cooking water to help the sauce blend.

Serve and enjoy: Plate the pasta and top with more grated Parmigiano Reggiano to give an extra touch of flavor. Serve immediately and enjoy your delicious roasted cherry tomato pasta!

Tips for Making the Perfect Roasted Cherry Tomato Pasta:

  1. Use Fresh Tomatoes: For the best flavor, opt for ripe, in-season cherry tomatoes. They’ll be sweeter and juicier, making the roasted tomatoes extra delicious.
  2. Customize the Cheese: While Parmigiano Reggiano adds a nutty richness to the dish, you can experiment with other cheeses like Pecorino Romano for a sharper flavor, or mozzarella for a creamier texture.
  3. Roast Tomatoes for Extra Flavor: Don’t rush the roasting process! Let the tomatoes roast for the full 45 minutes to develop a deep, caramelized flavor. You can even increase the temperature slightly in the last 5-10 minutes for an even crispier topping.
  4. Use Whole Grain Pasta: For a healthier twist, try using whole wheat or gluten-free pasta. It will add a nutty flavor and provide more fiber to the dish.
  5. Add Fresh Herbs: For a fresh burst of flavor, try adding some chopped basil, thyme, or oregano to the roasted tomatoes just before serving.
  6. Adjust the Breadcrumbs: For extra crunch, use panko breadcrumbs, which are lighter and crispier than regular breadcrumbs. Toasting them in a pan with a little olive oil before adding to the dish will give them even more flavor.
  7. Reserve Pasta Water: Always reserve a bit of pasta cooking water before draining. This starchy water helps to create a silky, cohesive sauce when mixed with the roasted tomatoes.
  8. Serve with a Side Salad: Pair your pasta with a light side salad dressed with olive oil and balsamic vinegar to balance out the richness of the dish.
  9. Make it Vegan: To make this dish vegan-friendly, simply substitute the Parmigiano Reggiano with a plant-based cheese or nutritional yeast, and skip the breadcrumbs that contain dairy.
  10. Meal Prep: This dish can be prepped in advance by roasting the tomatoes and storing them in the fridge. When you’re ready to serve, simply cook the pasta and mix it with the roasted tomatoes for an easy, quick dinner.
