Pasta e Patate is a warm, hearty and very tasty winter Primo piatto, typical of Italian cuisine, particularly Neapolitan cuisine.

For a mouth-watering result : a creamy, flavorful pasta and potatoes that perfectly envelops the sauce, turning out “apt,” dense, at one with the other ingredients!


In two words: the most delicious and comforting ever!

INGREDIENTS:

  • 4 medium potatoes
  • 2 stalk of celery
  • 2 carrots
  • 1 onion
  • 1 cup of tomato sauce
  • pancetta affumicata (smoked pancetta or smoked bacon)
  • smoked provolone cheese or scamorza cheese
  • salt and pepper to taste

METHOD

Start by chopping celery, carrot and onion.

We chop provolone or scamorza cheese into small pieces and keep it in the refrigerator.

In a saucepan, add a drizzle of extra virgin olive oil.

Add the celery, carrot and onion; add and brown the bacon.

Peel the potatoes and cut them into cubes.

We salt and pepper the potatoes and add to the sautéed vegetables with some tomato sauce.

Once well browned, we add a little water and let them cook for 20 minutes on a low flame (with a lid).

Meanwhile, we cook the pasta, drain and add to the potato mixture.

We take the pot off the heat and add the provolone or scamorza cheese.

We stir vigorously and….good appetite!!!
