Pasta e fagioli simple recipe is a classic dish of Italian cuisine, a thick and flavorful soup, especially suitable in the colder season.

It is a so-called “poor dish” even though it is actually a dish rich in beneficial properties.


In fact, beans, especially dried beans, contain an excellent amount of vegetable protein, fiber, vitamins and minerals and a low glycemic index.

The legume-grain combination also provides a complete amino acid set, comparable to that provided by animal protein.

This is the recipe for Pasta and Beans soup with carrot, celery and tomatoes.

INGREDIENTS:

  • 1/2 cups of pasta
  • a stalk of celery
  • 1 carrot
  • 1 onion
  • 2 diced tomatoes
  • 1 cup of vegetable broth
  • 1 cup of beans
  • 2 cloves of garlic
  • parsley to taste
  • 1 cup of vegetable broth
  • salt and pepper to taste
  • extra virgin olive oil to taste

METHOD

We start by chopping celery, carrot, and onion.
We salt and pepper the beans.

In a saucepan add oil, garlic and tomato.

We sauté the chopped vegetables and add the beans.

Once browned, cover with broth and close with lid.

We let it cook on a low flame for 10 to 15 minutes, remove the garlic and chop it together with the parsley.

Cook the pasta and add it to our bean mixture.

We add the parsley while stirring vigorously, serve on a plate and enjoy.
