Pan-fried pizzaiola potatoes are a simple and tasty side dish that is easy to prepare and great any time of year also because you will not need to turn on the oven.

- 3 cups of Tomato Puree
- 2 big potatoes
- 1 cup of mozzarella cheese (cut into slices)
- 1/2 cup of Parmigiano Reggiano cheese
- extra virgin olive oil to taste
- oregano to taste
- salt and pepper to taste
- basil leaves to garnish
We peel the potatoes, cutting them into slices that are not too thick.
In a frying pan we heat the oil and add part of the potatoes.
We add part of the tomato puree covering all the potatoes.
We add a pinch of salt, oregano and some grated Parmesan.
We add another layer of potatoes and top with the tomato puree.
Now we add the mozzarella slices.
We top with the remainder of the Parmesan, oregano, oil and cook on low heat for 20 minutes.
We decorate the dish with a few basil leaves and serve.
