Pan-fried Artichokes with Garlic and Parsley Recipe:

SERVINGS:2

INGREDIENTS:

  • 2 artichokes
  • parsley to taste
  • 2 tbsp of extra virgin olive oil
  • salt to taste
  • 1 clove of garlic
  • 1 lemon for cleaning the artichokes

METHOD:

Before cleaning the artichokes, let’s prepare a bowl with cold water and the juice of a squeezed lemon inside, which will be used to keep the artichokes from blackening once cleaned.

Let’s start cleaning the artichokes, first remove the toughest outer leaves, cut the stem, and remove the tip, (the inside of the stem we will not throw away but will cook it together with the artichokes), remove the “beard” that is at the base of the artichoke with a knife or a teaspoon, slightly widen the leaves by exerting light pressure outward, now let’s soak the artichokes in the previously prepared water and lemon, and let them soak about ten minutes.

After the time has elapsed, we drain the artichokes and gently blot them with paper towels, and place them in a nonstick pan, add the oil, salt the parsley and garlic previously chopped, cook for about 20 minutes with the lid on, during cooking you can add a little water to soften them.

We serve hot, and enjoy!

Tips for Perfect Pan-Fried Artichokes

  1. Choose fresh artichokes: Look for firm, compact artichokes with no brown spots for the best flavor and texture.
  2. Prevent browning: Keep prepared artichokes in lemon water to maintain their bright color.
  3. Parboil for tenderness: Boiling the artichokes before frying ensures they are tender and evenly cooked.
  4. Don’t overcrowd the pan: Fry the artichokes in batches if necessary to achieve a crispy texture.

Variations of Pan-Fried Artichokes

  1. Breadcrumb-Crusted Artichokes: Toss the artichokes in breadcrumbs before frying for extra crunch.
  2. Spicy Version: Add red chili flakes or a splash of hot sauce for a fiery twist.
  3. Herbaceous Delight: Mix in fresh mint or basil along with the parsley for a more aromatic flavor.
  4. Cheesy Topping: Sprinkle grated Pecorino Romano or Parmesan over the artichokes before serving.

Serving Suggestions

  • With a dipping sauce: Pair with aioli, lemon-tahini sauce, or garlic yogurt for dipping.
  • As an antipasto: Serve alongside olives, cheese, and cured meats for a traditional Italian antipasto platter.
  • With roasted meats or fish: This dish complements the rich flavors of roasted chicken, lamb, or grilled fish.
