These cookies are little gems, dusted with a delicate snowfall of powdered sugar, making them not only a treat for the palate but also a feast for the eyes.

Ideal for afternoon tea, a special occasion or simply to brighten the day, these cookies will impress with their balance of flavor and texture.

Approximately 24 cookies
For the Cookies:
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Orange Cream Filling:
  • 1 cup powdered sugar
  • 2 tablespoons orange zest
  • 3 tablespoons unsalted butter, room temperature
  • 1 tablespoon orange juice
  • 1/2 teaspoon pure orange extract (optional for a stronger flavor)
For Dusting:
  • 1/4 cup powdered sugar
  1. Prepare the Cookie Dough:
    • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
    • In a large bowl, cream together 1 cup of butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
    • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
    • Divide the dough in half, shape into disks, wrap in plastic, and chill for at least 1 hour.
  2. Bake the Cookies:
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • On a floured surface, roll out one disk of dough to about 1/8 inch thickness. Using a round cookie cutter, cut out cookies and place them on the prepared baking sheets.
    • Bake for 8-10 minutes or until the edges are just starting to brown. Transfer to a wire rack to cool completely.
  3. Make the Orange Cream Filling:
    • In a bowl, combine 1 cup powdered sugar, orange zest, 3 tablespoons butter, orange juice, and orange extract. Beat until smooth and creamy.
  4. Assemble the Cookies:
    • Once the cookies have cooled, spread the orange cream on the flat side of half of the cookies. Top with the remaining cookies to create sandwiches.
  5. Final Touch:
    • Sift the remaining 1/4 cup powdered sugar over the filled cookies for a beautiful, snowy finish.
  6. Serve and Enjoy:
    • Allow the filling to set for a few minutes before serving. These cookies are best enjoyed the day they are made but can be stored in an airtight container for up to 3 days.
