This delicious take on the classic dessert combines rich, velvety zabaglione custard with layers of delicate ladyfingers cookies and creamy mascarpone.

Ingredients:
  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 1/2 cup sweet Marsala wine
  • 1 pound (16 oz) mascarpone cheese, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups strong brewed coffee, cooled
  • 3 tablespoons coffee liqueur (optional)
  • 24-30 ladyfinger biscuits (savoiardi)
  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings, for garnish
Instructions:
  1. In a heatproof bowl, whisk together the egg yolks and sugar until well combined.
  2. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water. Slowly whisk in the Marsala wine and continue whisking constantly until the mixture thickens and becomes pale in color, about 8-10 minutes. The zabaione is ready when it reaches a ribbon-like consistency. Remove from heat and let it cool to room temperature.
  3. In a separate bowl, beat the mascarpone cheese until smooth and creamy.
  4. Gently fold the cooled zabaione into the mascarpone cheese until smooth and uniform.
  5. In a shallow dish, combine the cooled coffee and coffee liqueur, if using.
  6. Quickly dip each ladyfinger biscuit into the coffee mixture, ensuring they are moistened but not soaked, and arrange them in a single layer in the bottom of a 9×13 inch serving dish.
  7. Spread half of the zabaione-mascarpone mixture over the ladyfingers, smoothing it out into an even layer.
  8. Repeat with another layer of dipped ladyfingers and the remaining zabaione-mascarpone mixture.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
  10. Before serving, dust the top of the tiramisu with unsweetened cocoa powder and sprinkle with dark chocolate shavings for an elegant finish.
  11. Slice and serve the Zabaione Infused Tiramisu, and savor the luxurious blend of zabaione, mascarpone, and coffee-infused bliss.
