Makes about 30 S cookies

INGREDIENTS:

  • 2 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 2/3 cup unsalted butter, at room temperature
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 pinch of salt

 

 

METHOD:

Prepare the dough:

In a large bowl, sift the flour and add a pinch of salt.
In another bowl, cream the softened butter and sugar until smooth and creamy.
Add the whole egg and yolk to the butter and sugar mixture, mixing well.
Add the vanilla extract.
Gradually add the flour to the wet ingredients, mixing until the dough is smooth and soft.

Cool the dough:

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This makes the dough easier to handle.

Form the cookies:

Preheat the oven to 350°F (175°C).
Remove the dough from the refrigerator and divide it into small portions.
On a lightly floured surface, roll the dough into strings about 1/2 inch in diameter.
Cut the strings into 4-inch segments and shape each segment into an “S” shape.

Bake:

Place the cookies on a baking sheet lined with baking paper, leaving some space between each cookie.
Bake in the preheated oven for about 10 to 12 minutes, or until the edges of the cookies are lightly browned.
Remove the cookies from the oven and let them cool completely on a wire rack.

 

Tips
If you like, you can sprinkle powdered sugar over the cooled cookies for an extra touch of sweetness.
Store the cookies in a tin or airtight container to keep them fresh and crisp.
